Superfood Winter Salad

Ingredients:

  1. 2 cups mixed greens (like spinach, kale, or arugula)
  2. 1/2 cup roasted sweet potatoes, cubed (only if on recovery day)
  3. 1/4 cup pomegranate seeds (only if on recovery day)
  4. 1/4 cup walnuts (lightly toasted)
  5. 1/4 cup raw crumbled goat cheese
  6. 1 tbsp chia seeds
  7. Dressing:- 2 tbsp olive oil – 1 tbsp apple cider vinegar – 1 tsp monk fruit or stevia – Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the mixed greens, roasted sweet potatoes, pomegranate seeds, walnuts, and chia seeds.
  2. For the dressing, whisk together olive oil, apple cider vinegar, monk fruit or stevia, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently.
  4. Top with crumbled goat cheese.
