Ingredients:
- 2 cups mixed greens (like spinach, kale, or arugula)
- 1/2 cup roasted sweet potatoes, cubed (only if on recovery day)
- 1/4 cup pomegranate seeds (only if on recovery day)
- 1/4 cup walnuts (lightly toasted)
- 1/4 cup raw crumbled goat cheese
- 1 tbsp chia seeds
- Dressing:- 2 tbsp olive oil – 1 tbsp apple cider vinegar – 1 tsp monk fruit or stevia – Salt and pepper to taste
Instructions:
- In a large bowl, combine the mixed greens, roasted sweet potatoes, pomegranate seeds, walnuts, and chia seeds.
- For the dressing, whisk together olive oil, apple cider vinegar, monk fruit or stevia, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Top with crumbled goat cheese.
