Spinach and Cheese Frittata

Ingredients:

  • 1 bunch or 12 ounces of spinach chopped
  • 1 yellow onion chopped
  • 1 cup green onion chopped
  • 5 organic eggs
  • 2 Tbsp coconut oil or butter
  • Oregano, parsely and basil to taste
  • 8 ounces raw cheese (goat, sheep, or water buffalo)
  • ½ tsp salt

Directions:

Preheat oven to 350 degrees.  In a medium skillet on medium heat,  cook onions in butter or oil for 10 minutes.  Add green onions. Cook for 5 more minutes. Remove from heat and cool. Wisk eggs. Wisk in eggs and seasoning and stir in onion mixture. Once well mixed pour into a pie plate coated with coconut oil.  Bake at 350 degrees for 30 minutes.
