INGREDIENTS:
1 LB Ground Meat (turkey, beef, bison)
1 Small Yellow Onion
1 Small Red Pepper
2 Japanese Sweet Potatoes (add only if on recovery day)
4 TBSP Chopped Dill Pickles
1 Cup Avocado Mayo
1/2 TSP Garlic, Onion Powder & Paprika
2 TBSP Tomato Paste
2 TBSP Relish / Dill Pickles
1 TSP White Vinegar
1 TSP Himalayan Salt
DIRECTIONS:
Preheat oven to 375F
Chop sweet potatoes into small bite size pieces, spray with avocado oil and bake for 20-25 min until tender
Chop the onion and sauté in a large pan on medium heat with a dab of avocado oil until translucent
Add the ground turkey and cook thoroughly
Remove the cooked potatoes and top with the cooked beef/onion mix, then the chopped red pepper and dill pickles
Mix together the avocado mayo, spices, tomato paste, relish/pickles and vinegar then spread it onto of the casserole.
Cook an additional 5-10 min to make the vegetables tender if desired.
Remove and garnish with green onions or chopped lettuce before serving.
