Ingredients
Custard Base
- 1 cup full-fat coconut cream
- 3 tbsp chia seeds
- 1 tbsp MCT oil (optional)
- 1/2 tsp vanilla extract
- Pinch of sea salt
- Stevia or monk fruit to taste
- 1/2 cup mixed berries
(blueberries, raspberries, blackberries) - 1 tbsp water
- 1 tsp lemon juice
- Pinch of cinnamon (optional)
Instructions
- Pour 1 cup of thick coconut cream into a glass mixing bowl. Make sure it’s full-fat and well mixed—no separation.
- Add 3 tbsp chia seeds, 1/2 tsp of vanilla, sweetener, pinch of salt, and 1 tbsp MCT oil. Whisk thoroughly. Whisk for a full 30–45 seconds.
- Cover and refrigerate for at least 2 hours (overnight is best).
- Add 1/2 cup of berries, 1 tbsp of water, and 1 tsp of lemon juice to a small pan. Heat on low-medium. Cook until berries break down (5–7 minutes).
- Spoon chia custard into a serving glass. Pour warm berry reduction over the top.
