Coconut Cream Chia Custard with Warm Berry Reduction

Ingredients

Custard Base

  • 1 cup full-fat coconut cream
  • 3 tbsp chia seeds
  • 1 tbsp MCT oil (optional)
  • 1/2 tsp vanilla extract
  • Pinch of sea salt
  • Stevia or monk fruit to taste
  • 1/2 cup mixed berries
    (blueberries, raspberries, blackberries)
  • 1 tbsp water
  • 1 tsp lemon juice
  • Pinch of cinnamon (optional)

Instructions

  1. Pour 1 cup of thick coconut cream into a glass mixing bowl. Make sure it’s full-fat and well mixed—no separation.
  2. Add 3 tbsp chia seeds, 1/2 tsp of vanilla, sweetener, pinch of salt, and 1 tbsp MCT oil. Whisk thoroughly. Whisk for a full 30–45 seconds.
  3. Cover and refrigerate for at least 2 hours (overnight is best).
  4. Add 1/2 cup of berries, 1 tbsp of water, and 1 tsp of lemon juice to a small pan. Heat on low-medium. Cook until berries break down (5–7 minutes).
  5. Spoon chia custard into a serving glass. Pour warm berry reduction over the top.
