Ingredients
- 3 lbs beef short ribs (exactly 3 pieces bone-in — 3–4 inches each)
- 3 tbsp beef tallow
- 1 tbsp sea salt
- 1 tsp cracked black pepper
- 4 cloves garlic (crushed)
Instructions
- Pat the ribs dry thoroughly and season all sides evenly with 1 tbsp sea salt and 1 tbsp cracked black pepper.
- Heat a black cast iron pan over medium-high heat. Add 3 tbsp of beef tallow and allow it to fully melt.
- Place the same 2-3 ribs into the pan in a consistent orientation. Sear for 2–3 minutes per side until a deep golden-brown crust develops.
- Add crushed 4 cloves (crushed) garlic directly into the same pan. Allow the garlic to toast in the rendered tallow and beef juices.
- Transfer the same rib(s) individually into a slow cooker with low heat. Pour all remaining contents from the pan including the tallow, garlic, and juices over the ribs.
