Slow-Cooked Beef Short Ribs in Tallow

Ingredients

  • 3 lbs beef short ribs (exactly 3 pieces bone-in — 3–4 inches each)
  • 3 tbsp beef tallow
  • 1 tbsp sea salt
  • 1 tsp cracked black pepper
  • 4 cloves garlic (crushed)

Instructions

  1. Pat the ribs dry thoroughly and season all sides evenly with 1 tbsp sea salt and 1 tbsp cracked black pepper.
  2. Heat a black cast iron pan over medium-high heat. Add 3 tbsp of beef tallow and allow it to fully melt.
  3. Place the same 2-3 ribs into the pan in a consistent orientation. Sear for 2–3 minutes per side until a deep golden-brown crust develops.
  4. Add crushed 4 cloves (crushed) garlic directly into the same pan. Allow the garlic to toast in the rendered tallow and beef juices.
  5. Transfer the same rib(s) individually into a slow cooker with low heat. Pour all remaining contents from the pan including the tallow, garlic, and juices over the ribs.
